STRACCHINO WITH VEGETABLE RENNET
The rennet used for this cheese is of of vegetable origin, and it is extracted from the thistle (Cynara Cardunculus). Once, before the discovery of a coagulant of animal origin, in order to obtain the curds, in the MILK a flower of thistle, drapped in a perforated bag, and left to rest all night long. The coagulant proprieties of this plant are known by ancident airymen.
