It's a soft cheese that belongs to the dairy tradition of Romagna and is characterized by its distinct creaminess and spreadability.
Its color is nacre white and the aroma pleasantly acidic but at the same time delicate. Its soft shapes will adhere to the container in which it is placed.
It is made from pasteurized whole cow's milk collected from selected stables, placed in our typical geographic area (Emilia-Romagna). Autochthonous milk enzymes, salt and rennet are added to the product.
The sea salt used is obtained from the valuable work of sun, wind and sea. A natural ingredient that brings useful minerals to our bodies.
It is consumed as a fresh table cheese combined with fresh vegetables, rocket salad, jams, honey or caramelized fruit, especially figs. It can be used to fill croutons and bread. It is traditionally paired to the “piadina”, to obtain one of the typical Romagna region dishes.
